ABSTRACT: The Ecuadorian Amazon harbors native ingredients with high gastronomic and tourism
potential. Although Myrciaria dubia (camu camu) is widely documented for its biochemical
composition (vitamin C, phenolic compounds), a knowledge gap exists regarding its applicability in
protein denaturation processes of local fish under controlled conditions. This study analyzes the use of
camu camu in acid marination techniques as an Amazonian culinary innovation that articulates
technological criteria with heritage-environmental valorization. A quasi-experimental comparative
study was conducted in the laboratories of the Escuela Superior Politécnica de Chimborazo (ESPOCH),
where the capacity of fresh camu camu pulp as an acidic agent in protein denaturation of croaker
(Cilus gilberti) in 150 g portions under refrigeration at 4 °C was evaluated, using traditional lemon as
control. Structured sensory evaluation (color, texture, flavor, aroma) was applied at 10, 20, 30, and 40-
minute intervals, systematically observing changes in protein denaturation (translucent to opaque
white coloration, firmness and muscular cohesion). Results demonstrated that camu camu achieved
complete protein denaturation in 30 minutes, reducing the time required by lemon by 25%, presenting
firmer texture, superior cohesion, and a differentiated organoleptic profile (fresh fruity acidity, mild
citric aroma, taste-texture balance). This superiority is attributed to the synergy between acidification
and antioxidant properties of camu camu, which prevent proteolytic degradation and post-cut
oxidation. It is concluded that camu camu constitutes a viable and functionally superior natural acidic
agent for marinating Amazonian fish, with demonstrably greater potential than international
comparators. Its incorporation into Amazonian gastronomy simultaneously articulates technological
innovation, environmental sustainability, and territorial development, strengthening Ecuadorian
gastronomic identity and positioning the country as a reference in sustainable gastronomic tourism.
Future instrumental research will consolidate the scientific basis and facilitate operational adoption in
local gastronomic enterprises.

INTRODUCCIÓN
La Amazonía ecuatoriana, reconocida por su megadiversidad biológica y cultural, constituye una fuente
invaluable de ingredientes autóctonos con alto potencial gastronómico y turístico. En este contexto, el
Myrciaria dubia (conocido localmente como camu camu) se destaca por su elevado contenido de
vitamina C, compuestos fenólicos y capacidad antioxidante, propiedades que lo posicionan como un
insumo prometedor para la innovación culinaria sostenible (1). El uso del camu camu en técnicas de
desnaturalización del pescado particularmente en preparaciones afines al ceviche amazónico; representa
una alternativa natural al uso de ácidos convencionales, promoviendo una cocina más saludable y
respetuosa con el entorno.
Aunque estudios previos documentan ampliamente la composición bioquímica del camu camu y su
potencial antioxidante, existe un vacío de conocimiento crítico respecto a su aplicabilidad instrumental
en procesos de desnaturalización proteica de pescados locales bajo condiciones controladas de
temperatura, tiempo y proporciones específicas. Más aún, no se encuentran registros que hayan
